Asian pear and Diakon radish salad with chia dressing

If you are into black and white and have planned a minimalistic table set, this salad will shine on your table.

Asian pear has a taste of something between apple and pear and it is crunchy and juicy. Pairing Asian pear with daikon radish combines the spicy note of the root with sweetness of pear.

Adding a simple dressing to keep the colours white and adds a bit of lemony taste to it completes the recipe.


Ingredients:


  • 1 cup Asian pear cut in the match sizes

  • 1 cup daikon radish

  • 3 Tbsp lemon juice

  • 2 Tbsp olive oil

  • 1/2 tsp chia seeds

  • 1/2 Tbsp lemon zest

  • 1 Tbsp mint leaves chopped and some to garnish

  • Salt and pepper


Instructions:


  1. In a bowl mix the pear and radish.

  2. In a small bowl whisk lemon juice, olive oil, chia seeds, lemon zest and chopped mint. Season with salt and pepper to taste.

  3. Add the dressing to the mix of pear and radish and toss it.

  4. Serve it in a plate and garnish with mint leaves.
