I am so fond of fennel. I use it in so many salad recipes.
This salad has the combination of sweet and sour taste. You can make this salad with or without chicken.
Ingredients:
1 Granny Smith apple cut in thin slices
1 fennel bulb thin sliced
2 mint springs coarsely chopped and couple of leaves to garnish
Juice of 1 lemon
1 Tbsp olive oil
Salt and pepper
1/2 cup cooked chicken breast cut in small pieces
Instructions:
In a plate lay the apple slices and top it with fennel.
add chicken pieces on top.
In a bowl mix the lemon juice, olive oil and chopped mint. Add salt and pepper and whisk.
Pour the dressing on salad.
Garnish with mint leaves.
