This carrot salad with blood orange pulps makes a juicier version of traditional carrot salads. I add orange zest and cumin to the dressing to add a bit of kick into a mild taste of carrots.
Ingredients:
3 medium sized carrots 🥕 (use rainbow carrots to add different colours) grated or peeled to make ribbons
1 blood orange peeled and sliced
1 Tbsp raisin
1 Tbsp chopped parsley
Zest of the orange
1 tsp cumin crushed
2 Tbsp olive oil
1 Tbsp lemon juice
1/2 Tbsp apple cider vinegar
1 Tbsp orange juice
Salt and pepper
Instructions:
In a large bowl combine carrots , oranges, raisin and parsley.
In a smaller bowl make the dressing by mixing olive oil, lemon juice, apple cider vinegar, orange juice, orange zest , cumin, salt and pepper.
Serve the salad in a flat dish and pour the dressing on it.
Use some parsley to top the salad.
