Rainbow carrots and blood orange salad



This carrot salad with blood orange pulps makes a juicier version of traditional carrot salads. I add orange zest and cumin to the dressing to add a bit of kick into a mild taste of carrots.


Ingredients:


  • 3 medium sized carrots 🥕 (use rainbow carrots to add different colours) grated or peeled to make ribbons

  • 1 blood orange peeled and sliced

  • 1 Tbsp raisin

  • 1 Tbsp chopped parsley

  • Zest of the orange

  • 1 tsp cumin crushed

  • 2 Tbsp olive oil

  • 1 Tbsp lemon juice

  • 1/2 Tbsp apple cider vinegar

  • 1 Tbsp orange juice

  • Salt and pepper


Instructions:


  1. In a large bowl combine carrots , oranges, raisin and parsley.

  2. In a smaller bowl make the dressing by mixing olive oil, lemon juice, apple cider vinegar, orange juice, orange zest , cumin, salt and pepper.

  3. Serve the salad in a flat dish and pour the dressing on it.

  4. Use some parsley to top the salad.
