This flatbread is a perfect addition to your cheese platter. It goes well with cheese, nuts and salty spicy olives.
Rosé wine or any pink bubbles bring a harmony between the drink and food.
Ingredients
3 cups of all purpose flour
2 1/2 cups warm water
1 package of dry active yeast
1 tsp sugar
1 tsp salt
8 stalks fresh rhubarb
1 Tbsp maple butter
Instructions:
In a bowl dissolve yeast and sugar in water. Let it stand for 10 min until yeast gets activated and makes bubbles.
Add the flour and mix to form a dough.
Put the dough in a lightly greased bowl and turn to get covers by oil.
Cover it with a wet cloth and keep it in a warm place for 30 min until it gets double the size.
This gives you enough dough to make 4 flat breads.
Divide the dough in 4 pieces. Carefully transfer to a lightly greased baking tray and flatten by pressing with hand.
Gently press 2 or 3 stalks of rhubarb into each dough. Brush with olive oil and maple butter. Sprinkle with some coarse salt.
Bake it at 450 F for 10 min or until the bread is golden brown.
Brush with more maple butter.
